Midweek Mealtime - Italian Wonderpot

Have you ever seen the pins on Pinterest or recipes floating around touting the amazing wonders of the Italian Wonderpot?  A "wonderpot" is a dish that is quite literally just thrown together on the stove and then cooked until done.  I have been dying to try it myself and finally tested it last night.  It really works!  And it really is nice to have some time to relax between throwing ingredients in the pan and dinner time.



Ingredients:
  • 2 Tbsp. minced garlic 
  • 4 cups vegetable broth
  • 12 oz whole wheat fettuccine
  • 10 oz bag fresh spinach, chopped
  • 28 oz can diced tomatoes
  • 1 medium onion, chopped
  • 1/2 Tbsp. dried basil
  • 1/2 Tbsp. dried oregano
  •  1/4 tsp. red pepper flakes
  • 12 oz shrimp (I used frozen)
  • 8 oz. sliced mushrooms
Directions:
  1. In a stock pot, briefly saute garlic just until fragrant.
  2. Add remaining ingredients to pot, and bring it to a rolling boil.
  3. Boil, uncovered, for 12-15 minutes or until pasta is tender.
