Midweek Mealtime - Salmon with Creme and Forbidden Rice

Have you ever tried forbidden rice?  It's a very nutty, delicious grain with an interesting story.  It's called forbidden rice because back in ancient China, it was so rare that it was only served to the Emperor.  The best thing about forbidden rice?  It's chock-full of antioxidants.  This dinner includes the healthy benefits of this rice AND salmon.  Best part?  It's easy and fast.

Roast Salmon with Creme and Forbidden (Black) Rice

Ingredients:
  • 6-4 oz salmon fillets
  • 1/2 cup Greek yogurt
  • 2 Tbsp. chives
  • 3 Tbsp. minced shallots
  • 1 Tbsp. chopped parsley
  • 2 tsp. lemon juice
  • 2 cups black rice 

Directions:
  1. Cook rice in a rice cooker or according to instructions.
  2. Preheat oven to 450 degrees.
  3. Place salmon on a foil-lined baking sheet, and bake 12-15 minutes or until fish flakes with a fork.
  4. While salmon is baking combine yogurt, chives, shallots, parsley, and juice.
  5. Serve sauce with salmon and rice.
