Midweek Mealtime - Apple Sausage

Who here likes breakfast sausage?  Who here likes chicken sausage?  Who here likes apple chicken sausage?

I can emphatically answer yes to all those questions!

What I don't like, however?  The nutritional content of a lot of sausages and the price of sausage without questionable content.  Guess what I discovered?  You can make your own, and it's extremely easy!

Ingredients:

  • 1 pound lean ground chicken breast or turkey breast
  • 1/2 tsp sage
  • 1/2 tsp marjoram
  • 3/4 tsp thyme
  • 1/4 tsp cayenne pepper
  • heaping 1/4 tsp alspice
  • 1/4 tsp pepper
  • 3/4 tsp salt
  • 1 tsp minced garlic
  • 1 diced Granny Smith apple (and yes, I leave my skins on!)
  • 1/2 Tbsp maple syrup

Directions:

  1. Combine all ingredients until well mixed.
  2. Shape into 8 patties.
  3. Cook in skillet - turning once - until meat is cooked through and patties are browned on both sides.
That's it!  Easy peasy!
