Midweek Mealtime - Avocado Hummus

I have only recently discovered the goodness that is guacamole....  I'm not sure if it was because of taste or consistency or just the fact that I'm extremely picky, but I never liked it until I made my own. However, I tried a very basic recipe a few months ago and fell in love.  Unfortunately, in addition to being picky, I am also easily bored.  (Drives my husband crazy, truth be told!)  Anyways, when I heard of avocado hummus, my curiosity was instantly piqued!  Hummus is one of my all-time favorite snack foods!

I looked at the recipe online and decided to do a little tweaking.  Made it as a snack on Sunday and have been snacking on it ever since!  And in case you're wondering, there is a bit of oxidation just on top where the avocado meets the air, but not much!  Definitely not enough to keep me from eating it.  All right, enough preamble:

Ingredients:

  • 1 can chick peas (garbanzo beans), drained and rinsed
  • 2 avocados, peeled and seeded
  • 3 Tbsp. olive oil
  • 1 tsp.  peanut butter
  • juice from 1 lime (about 3-4 Tbsp.)
  • 2 tsp minced garlic
  • 1/8 tsp cumin
  • sea salt to taste

Directions:

Pretty easy here:  just toss it all into a food processor and blend until smooth.  

NOTE:  do NOT forget the garlic!  I made that mistake and almost chucked the whole recipe in the trash before I realized it.  Garlic transforms this into the heavenly dip it is.  Yum!
