Midweek Mealtime - Spicy Mexican Taco Bake

Life is too short to have to endure bland food!  Of course that means you MUST try this dish!  If you like spice, this dish delivers and WILL wake up your taste buds.  Be warned, though, that some may find this a bit too spicy.  Feel free to adjust the chili powder and cumin to your own personal preference.

One other thing:  this recipe is specifically for you 21 Day Fixers.  It uses the Fix containers to measure ingredients.  In case you're wondering, this recipe makes 4 servings - each counts as 1 yellow, 1 green, 1 blue, and 1 red container.

Midweek Mealtime Brown Rice Taco Bake

Ingredients:

  • 4 yellow containers of cooked brown rice
  • 20 oz lean ground turkey
  • 1 Tbsp minced garlic
  • 2 sweet peppers, chopped
  • 1 onion, chopped
  • 1 can diced tomatoes with green chiles
  • Juice from 1 lime
  • up to 1 Tbsp chili powder
  • up to 1/2 Tbsp cumin
  • 1 tsp onion powder
  • 4 blue containers sharp cheddar cheese

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Saute onion, garlic, peppers, onions, and turkey until meat is no longer pink.
  3. Combine lime juice, tomatoes, and spices in a bowl.  Add to meat mixture along with 2 blue containers cheese and brown rice.
  4. Pour mixture into a 9x9 square baking dish.
  5. Cover with foil and bake for 20 minutes.
  6. Remove foil, add remaining cheese, and bake for another 10 minutes.
  7. Enjoy!
