Midweek Mealtime - Slow Cooker Thai Peanut Chicken

I'm beginning to sense a theme here...  That is, I've truly been enjoying bold flavors.  Tonight's recipe was a good one - a Thai dish without the typical curry.  This one is all peanut.  Feel free to experiment with different vegetables - in fact, throw whatever you have in the fridge as far as veggies.  They'll all be good!

Best part? 10 minutes of prep and then it cooks all day, so you can come home to a hot and delicious meal!

Midweek Mealtime Peanut Chicken

Ingredients:

  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 medium zucchini, chopped
  • 1 red pepper, cut into strips
  • 1/2 cup chicken broth
  • 2/3 cup chunky peanut butter
  • 1 Tbsp minced garlic
  • 1/3 cup low sodium soy sauce
  • 1 Tbsp tapioca
  • 1 tsp honey
  • Juice from 1 lime
  • Peanuts for garnish, if desired

Directions:

  1. Add chicken and veggies to 4 quart slow cooker.
  2. Mix broth, peanut butter, garlic, soy sauce, tapioca, honey and lime juice in bowl.  Pour over chicken and vegetables.
  3. Cook on low 6-8 hours.
