Midweek Mealtime - Pork Chops with Strawberry Sauce

This week I have tried several new recipes in an effort to get my head back in the game, and let me tell you:  it's been FUN!  I'm having so much fun that I could hardly decide which recipe to share with you today!  I decided on one that is quick, easy, and utterly unexpected (at least, it was for me!).

The strawberry sauce is equally sweet and tart and is the absolute star of this dish.

Oh, and did I mention that this dish is done in less than 15 minutes??  It took almost as long for my oven to preheat as it did for me to put this together.

Ingredients:

  • 6-8 pork chops
  • Salt and Pepper to taste
  • 1 pound fresh strawberries, stems cut off
  • 1/2 cup balsamic vinegar
  • 2/3 oz fresh rosemary leaves (or 2 very large sprigs)
  • 1 Tbsp minced garlic
  • 2 Tbsp honey

Directions:

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Season pork chops with salt and pepper.  Bake pork chops 10-15 minutes (depending on thickness).
  3. Meanwhile, coarsely chop strawberries and rosemary.
  4. Add vinegar, rosemary, strawberries, garlic, and honey to saucepan.  Boil until thickened.
  5. Serve strawberry sauce over pork chops.
Just a note:  this makes a lot more strawberry sauce than you need for this recipe, but don't throw away the extra!  Trust me, it is just that good!  I'm thinking I will try it over chicken later this week or blend it smooth as a fresh salad dressing.

Because I only use a limited amount of strawberry sauce, I am not counting it on the 21 Day Fix.  However, 1/3 of the sauce recipe equals 1 purple container, so if you use that much, count it as such.  And of course, one pork chop will count as a red container.
