Midweek Mealtime - Fiesta Boats!

Yesterday was my birthday.  I turned 33.

Yes, I'm getting old. 

But honestly, I'm not upset about it.  My life at 33 may not be *exactly* how I'd planned it would be, but - in all reality - I've had so many dreams that it would be incredible if it was!  Truth be told, though?  I have been blown away with blessings in my 33 years.  I have an incredible hunk of a husband; I have a stable (well, as much as it can be, I suppose) job with a department full of coworkers that I love; my boss is one of my favorite people; I have a sweet and cuddly fur-baby...  Then there's my amazing friends and family...I could spend the entire night just listing the million blessings in my life right now.

But that's not why you came here, right?  Ok, ok.  Well, in honor of my birthday (which also happens to be Cinco de Mayo, by the way), I bring you Fiesta Boats!  It's the ultimate party squash!  (Is that a thing?  Oh, well, if not!)

Fiesta Boats - Spaghetti Squash filled with ground turkey, beans, and cheese.  What could be more fun?

Ingredients:

  • 2 medium spaghetti squash, cooked
  • 19 oz ground turkey breast
  • 1 onion, chopped
  • 2 sweet peppers, chopped
  • 2 Tbsp minced garlic
  • 1 can black beans, drained and rinsed well
  • 2 tsp chili powder
  • 1 8-oz can tomato sauce
  • 1/2 cup cilantro, finely chopped
  • 1 cup shredded cheddar cheese

Directions:

  1. Microwave squash for 1-2 minutes, then cut in half lengthwise.
  2. Microwave, cut side down in approximately 1/2 inch of water for 7-8 minutes, or until soft.
  3. Shred squash with a fork.
  4. Saute onion, garlic, and pepper until onion is translucent.  Add turkey and cook until browned.  Add beans, chili powder, tomato sauce, and cilantro.  Bring *just* to a boil; remove from heat.
  5. Combine squash strands and tomato mixture in a large bowl.  Divide evenly among spaghetti squash shells.  Top with cheese.
  6. Place squash under broiler until cheese is melted.
