Midweek Mealtime - 3 Day Refresh Salad

I am still refreshing, so tonight's recipe is a simple one and is straight out of the 3 Day Refresh book.  Let me tell you, this salad is incredible, especially after shakes and veggies all day.  I have chosen to have this salad every night for dinner as my option while refreshing.

Oh, and maybe I'm just not very original when it comes to salads, but I have never tried sunflower seeds with bell peppers.  The combo was surprising and quite good!

Ingredients:

  • 2 cups salad greens
  • 1/2 cucumber, chopped
  • 1/2 red pepper, chopped
  • 1/2 cup grape tomatoes, halved
  • 1 tsp sunflower seeds
  • 1/2 tsp extra virgin olive oil
  • 1 Tbsp lemon juice

Directions:

  1. Toss vegetables together; top with seeds.
  2. Stir oil and juice together, sprinkle over salad.
