Midweek Mealtime - Breakfast Bake

So what do you make when your planned recipe is a complete and total disaster?  Why, you go "shopping" in your pantry and you make breakfast for dinner!  And, as an added benefit, you get breakfast for the week!  Overall, I'm kind of glad that experiment last night went as wrong as it did...


Ingredients:

  • 2 lb 93% lean ground turkey breast
  • 1 tsp sage
  • 1 tsp marjoram
  • 1 1/2 tsp thyme
  • 1 Tbsp maple syrup
  • 1 12 oz package broccoli florets
  • 2 red peppers, diced
  • 2 cups all whites (in a carton)
  • 12 eggs, lightly beaten
  • 2 cups shredded cheddar/pepper jack cheese

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.  
  2. Brown turkey and spices in a large skillet.
  3. Once meat is cooked through, add maple syrup and mix well.
  4. Add meat mixture to the bottom of a 9x13 pan.  Layer broccoli and peppers over turkey.   Pour eggs and egg whites over vegetables.
  5. Bake, covered with foil, for 50 minutes or until eggs are set.
  6. Remove foil; sprinkle cheese over casserole; and bake 5 minutes longer or until cheese is melted.
