So listen, this dessert? It's for a certain, select few of my readers. Specifically, this will apply to anyone who may be following a grain free and white-sugar free diet. OR if you are following a high fat diet, this would work well.
I made this for my boss's birthday because she was following such a diet. She raved about it for days!
All that to say, this has much more fat than I am used to eating. As such, this is RICH. A little goes a looooong way. Just warning you. ;) Now, prepare your eyes to feast on this indulgent deliciousness.
Ingredients:
- 5 medium-sized avocados
- 1 cup unsweetened cocoa powder
- 2/3 cup agave nectar or honey
- 1/2 cup coconut milk (from a can - use full fat!)
- 2 Tbsp pure vanilla extract
- Sliced almonds and strawberries for garnish
Directions:
- Peel and pit avocados.
- Blend all ingredients other than almonds and strawberries in a food processor or blender until smooth.
- Spread into cake pan, and top with strawberries and almonds.
- Refrigerate AT LEAST one hour (I did it overnight) to allow flavors to meld and mousse to set.
- Enjoy!
