OK, it's official...I'm definitely late to another "party"! How in the world did I not know about the concept of sheet pan dinners??? For me, it's been a life-changing concept! Healthy dinners in 30 minutes or less that only use one pan?? Um, I'm in love (and I think you'll see that over the next few weeks!). Don't believe they can change your life?
Try this recipe on for size!
Ingredients:
- 1 1/2 pounds chicken, cut into 1 inch pieces
- 1 whole pineapple, in chunks
- 1 red pepper, cut into large chunks
- 1 orange pepper, cut into large chunks
- 1 1/2 Tbsp. sesame oil
- Shredded unsweetened coconut and lime juice to taste
- Cooked rice
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- Spread chicken, pineapple, and peppers in a single layer on a large rimmed baking sheet.
- Drizzle evenly with sesame oil.
- Bake for 30 minutes or until chicken is cooked through.
- In a bowl, layer rice and chicken mixture. Top with lime juice and unsweetened coconut flakes to taste.
