Today marks the third day of 80 Day Obsession, and I can already tell this program is going to be a WILD ride! I have learned some things already, especially about flavors. Take this recipe, for example. The first time I read it's "mother" on Fixate, there was absolutely no way I ever thought that sweet potatoes could work as a binder. Am I the only one? But it seemed like the easiest way to prep for my plan D lunch container combos, so I gave it a shot.
I ended up being BUMMED when I finished the 4th portion on the 4th day. Yes, it's that good. And like I said, it hit every one of my lunch containers. Shall we get to it?
Ingredients:
- 2 small sweet potatoes, peeled and cut into large chunks
- 1 pound chicken tenderloins, cut into 1 inch pieces
- 1/4 cup extra-virgin olive oil
- 3 Tbsp white wine vinegar
- 1 1/2 tsp Dijon mustard
- 1 tsp honey
- 2 Tbsp basil leaves
- 1/2 tsp + 1 dash sea salt
- 1/2 tsp + 1 dash black pepper
- 4 tsp butter
- 1 bell pepper, chopped
- 1 cup cherry tomatoes, halved
- spring mix
Directions:
- In a pressure cooker (InstantPot), add 1.5 cup water to bottom and add rack. Place steamer basket on top of rack. Add potatoes and chicken to steamer.
- Using manual setting, cook chicken and potatoes for 5 minutes; allow to naturally release pressure for 5 minutes and then quick release.
- While chicken and sweet potatoes are cooking, place oil, vinegar, mustard, honey, basil, dash of salt and dash of pepper to a blender. Blend until smooth. Divide into four equal portions.
- When potatoes are done, mash them with butter and remaining salt and pepper.
- Add chicken, peppers, and tomatoes to potato mixture. Mix well. Divide into four equal portions.
- To serve, layer 1 cup spring mix with chicken mixture. Drizzle with dressing.
This recipe is 1 green, 1 red, 1 yellow, 1 orange, and 1 tsp for the Fix containers.
