Midweek Mealtime - Protein French Toast

I do most of my meal planning on Wednesdays now (I do the majority of my shopping at Aldi), and I was giddy to see this little item on sale this week!  Why was I so excited, you ask?  Because this right here is *the* secret ingredient - the secret sauce, if you will - to my current favorite breakfast!

Let me preface this by saying that - until very recently (a few months) - I was NOT a fan of French toast.  I thought it was bland, and I had yet to really taste a piece of French toast that wasn't soggy and limp.

But, it's one of hubby's favorite breakfasts, so I kept trying recipe after recipe.  I read and researched to find out what, exactly, made "good" French toast.  Found that the flavor could be GREATLY enhanced by a crap-ton of vanilla (seriously.  a crap-ton).  And then I found a recipe that called for flour as a batter.  It's express purpose was to prevent sogginess.  Tried it, loved it.  Then I got to thinking...why not try replacing the flour with protein powder?  After all, the flour wasn't needed for any chemical reaction (like it is for baking), and I have been lacking in protein lately...let me tell you, it's fantastic!  And the extra protein helped keep me fuller longer.  Now, since it's only 1 scoop for the entire recipe, it's not a ton of extra protein, but I do think it's enough to last.  Ready to try it?

Ingredients:

  • 1 loaf Brioche (IMPORTANT!  This makes the WHOLE recipe!)
  • 1 scoop unflavored or vanilla protein powder (I use Quest Multi-Purpose Mix)
  • 1 cup unsweetened vanilla almond milk
  • 3 eggs
  • 1/2 tsp ground cinnamon
  • 1 TBSP pure vanilla extract
  • 1 TBSP brown sugar
  • pinch salt 

Directions:

  1. Blend all ingredients except the brioche until there are no lumps left.
  2. Heat skillet until water droplets sizzle.
  3. Saturate bread in protein batter; let excess drizzle off.
  4. Fry bread in hot skillet until both sides are brown and crispy.
  5. Enjoy!
BTW:  I have made this batter one day and used it ~4-5 days in the morning for a fast and easy breakfast, even on weekdays.  Win, win!
