Midweek Mealtime - Hawaiian Chicken and Rice

OK, it's official...I'm definitely late to another "party"!  How in the world did I not know about the concept of sheet pan dinners???  For me, it's been a life-changing concept!  Healthy dinners in 30 minutes or less that only use one pan??  Um, I'm in love (and I think you'll see that over the next few weeks!).  Don't believe they can change your life?

Try this recipe on for size!

Sheet pan dinner

Ingredients:

  • 1 1/2 pounds chicken, cut into 1 inch pieces
  • 1 whole pineapple, in chunks
  • 1 red pepper, cut into large chunks
  • 1 orange pepper, cut into large chunks
  • 1 1/2 Tbsp. sesame oil
  • Shredded unsweetened coconut and lime juice to taste
  • Cooked rice

 Directions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Spread chicken, pineapple, and peppers in a single layer on a large rimmed baking sheet.
  3. Drizzle evenly with sesame oil.
  4. Bake for 30 minutes or until chicken is cooked through. 
  5. In a bowl, layer rice and chicken mixture.  Top with lime juice and unsweetened coconut flakes to taste.
See?  SOOOO easy - and let me tell you, it's soooo good!  My husband isn't a huge fan of lime juice or coconut, so he left his "naked," but I loaded up.  Tropical and heavenly!
