Have I mentioned I like ethnic food? Yeah, it's a bit of an addiction, really. And I always get so dang excited when I find a way to make my favorite dishes healthier. This recipe is a real winner! Now, disclaimer: it's not 100% clean. The ingredients do include sugar-free jell-o mix. BUT, I will definitely keep it in my repertoire because it is so much healthier than the original. All right, enough chit-chat. Let's get to the recipe!
Ingredients:
- 1 package sugar-free lemon gelatin mix (like Jell-O)
- 1 Tbsp cornstarch
- 1/2 cup fat free chicken broth
- 2 Tbsp. zesty Italian salad dressing
- 1 Tbsp minced garlic
- 1 pound boneless skinless chicken breasts, cut into bite-size chunks
- 6 oz snow peas
- 1 red pepper, cut into strips
- 2 cups cooked brown rice
Directions:
- Mix gelatin, cornstarch, and broth in a small bowl until powder is dissolved.
- Add chicken, garlic, and Italian dressing to skillet; saute until chicken is cooked through.
- Add snow peas and pepper; cook until veggies are crisp-tender, approximately 2 minutes.
- Stir in gelatin mixture; heat just until thickened.
- Serve over hot brown rice.
