Midweek Mealtime - Chicken Soft Tacos with Cilantro "Sour Cream"

These tacos are easy, tangy, and best of all - healthy!  Took me about 30 minutes to throw these together.

Ingredients:

  • 1 tsp garlic salt
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
  • 1 1/2 pound chicken breast, cut into strips
  • 1/2 cup nonfat Greek yogurt
  • 2 Tbsp fresh cilantro, chopped
  • Grated rind from 1 lime (see note at bottom of post)
  • Juice from half a lime
  • 6 whole wheat tortillas, soft taco size
  • Shredded lettuce, to taste
  • Chopped tomatoes, to taste

 

Directions

  1. Mix garlic salt, chili powder, and oregano in a large Ziploc bag.  
  2. Add chicken and shake until chicken is evenly coated.
  3. Cook chicken in a skillet until no longer pink, approximately 10 minutes, and turn intermittently.
  4. While chicken is cooking, combine yogurt, cilantro, lime juice, and rind.
  5. When chicken is cooked through, assemble the tacos with chicken, yogurt mixture, tomatoes, and lettuce.
Grate the lime rind by running the whole lime over a very fine grater.  Your goal is just to get the green parts of the lime, not the white pith beneath.  Not sure how much to grate?  Try to get the lime to look similar to this:


That way, you get the burst of flavor without the bitterness.  Win win!
