Ingredients:
- 1 tsp garlic salt
- 1/2 tsp chili powder
- 1/2 tsp dried oregano
- 1 1/2 pound chicken breast, cut into strips
- 1/2 cup nonfat Greek yogurt
- 2 Tbsp fresh cilantro, chopped
- Grated rind from 1 lime (see note at bottom of post)
- Juice from half a lime
- 6 whole wheat tortillas, soft taco size
- Shredded lettuce, to taste
- Chopped tomatoes, to taste
Directions
- Mix garlic salt, chili powder, and oregano in a large Ziploc bag.
- Add chicken and shake until chicken is evenly coated.
- Cook chicken in a skillet until no longer pink, approximately 10 minutes, and turn intermittently.
- While chicken is cooking, combine yogurt, cilantro, lime juice, and rind.
- When chicken is cooked through, assemble the tacos with chicken, yogurt mixture, tomatoes, and lettuce.
That way, you get the burst of flavor without the bitterness. Win win!
