Ahh, mid-summer! It's the time when tomatoes begin to turn red and cucumbers are full-grown and zucchini are prolific. As such, what would midweek mealtime be without a little zucchini? Soooo, I offer you this amazing little recipe:
Ingredients:
- 1 large zucchini (approximately 1 1/2 lb in total weight)
- 1 chicken sausage link (I used roasted pepper and asiago)
- 24 slices turkey pepperoni
- 1/4 cup reduced fat tomato basil feta cheese, crumbled
- 1/2 cup shredded Italian cheese blend
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- Cut zucchini in half, and scoop out the seeds until there is approximately 1/4-1/2 inch flesh left.
- Slice chicken sausage link thinly. Divide evenly over zucchini halves.
- Place 12 slices turkey pepperoni on each half.
- Sprinkle feta and shredded cheese blend evenly over zucchini halves.
- Bake for 40 minutes in preheated oven.
