Midweek Mealtime - Garlic Parsley Steak and Mushrooms

I've got a treat for you today!  I have made this dish several times in the last few weeks.  I've paired it with rice, sweet potatoes, and even as a topping on a salad.  It feels like a cheat meal (hello, steak?), but really is simple and easily able to be portioned out as part of a healthy diet (ahem, 21 Day Fix).  Best part?  There's a marinade period of 30 minutes - the perfect amount of time to get that Fix workout in!

Speaking of the 21 Day Fix, I simply use the red container to portion this out.

Oh, and one other note:  when you are making the marinade, it is going to see like it is really dry and that there are not enough wet ingredients to truly make a "marinade."  I PROMISE, once you blend it, it will!

Garlic Parsley Steak and Mushrooms

Ingredients:

  • 2 lb sirloin steak, cut into cubes
  •  8 oz sliced mushrooms
  • 1 cup dried parsley
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp water
  • 1/2 tsp dried oregano
  • 1-1/2 Tbsp lemon juice (approximately 1/2 lemon)
  • 1/2 Tbsp garlic
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Directions:

  1. Place parsley, EVOO, water, oregano, lemon juice, garlic, sea salt, and pepper in a blender or food processor.  Blend until sauce is green and creamy.  
  2. Transfer sauce to a 1 gallon ziplock bag.  Add steak, and squeeze all the air out of the bag before sealing.
  3. Massage the bag until each piece of meat is covered in sauce.  Refrigerate 30 minutes (and go get your workout on!).
  4. Finally, dump the entire bag into a large skillet.  Add mushrooms and saute until beef is brown and just firm to the touch.
