I've got a treat for you today! I have made this dish several times in the last few weeks. I've paired it with rice, sweet potatoes, and even as a topping on a salad. It feels like a cheat meal (hello, steak?), but really is simple and easily able to be portioned out as part of a healthy diet (ahem, 21 Day Fix). Best part? There's a marinade period of 30 minutes - the perfect amount of time to get that Fix workout in!
Speaking of the 21 Day Fix, I simply use the red container to portion this out.
Oh, and one other note: when you are making the marinade, it is going to see like it is really dry and that there are not enough wet ingredients to truly make a "marinade." I PROMISE, once you blend it, it will!
Ingredients:
- 2 lb sirloin steak, cut into cubes
- 8 oz sliced mushrooms
- 1 cup dried parsley
- 2 Tbsp extra virgin olive oil
- 2 Tbsp water
- 1/2 tsp dried oregano
- 1-1/2 Tbsp lemon juice (approximately 1/2 lemon)
- 1/2 Tbsp garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Directions:
- Place parsley, EVOO, water, oregano, lemon juice, garlic, sea salt, and pepper in a blender or food processor. Blend until sauce is green and creamy.
- Transfer sauce to a 1 gallon ziplock bag. Add steak, and squeeze all the air out of the bag before sealing.
- Massage the bag until each piece of meat is covered in sauce. Refrigerate 30 minutes (and go get your workout on!).
- Finally, dump the entire bag into a large skillet. Add mushrooms and saute until beef is brown and just firm to the touch.
