You HAVE to make this! I've now made it once a week for the last several, and I just can't get enough. Trust me, you NEED to try this recipe! It's simultaneously sweet and spicy, and it packs a powerful flavor punch. And the best part? It fits into the 21 Day Fix mealplan seamlessly. In fact, I simply count it as 4 reds for the entire recipe. Yes, even with the marinade.
Speaking of that marinade, I wanted to be as accurate as possible in my Fix calculations, so I even poured it in a measuring glass before using. Then, after I was finished with it, I poured it back into the measuring cup. As you can see from this pic, it's pretty dang close, so I'm calling it a draw. Feel free to make your own judgements as you see fit, though...(click the pic to enlarge)
Let's get to it, shall we?
Ingredients:
- 2 packages frozen shrimp (12 oz each), thawed and rinsed
- 1/4 cup honey
- 1/2 cup coconut oil
- 2 Tbs minced garlic
- 1 medium lime - you'll need the juice and zest for this recipe
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes
Directions:
- Place rinsed and drained shrimp in a gallon Ziploc bag.
- Microwave coconut oil and honey just until liquid.
- Mix oil, honey, garlic, lime zest, lime juice, salt, pepper, and pepper flakes in a bowl until well-combined.
- Pour marinade over shrimp in Ziploc. Let sit for 30-40 minutes (perfect timing for, say, a Fix workout?).
- Remove the shrimp from the marinade, and cook over medium heat until they are pink and opaque.
- If desired, bring marinade to a boil and reduce to use as a sauce. Please note, if you use it as a sauce, be sure to count it as teaspoons for the Fix!
