Today's recipe is one of those meals that is so simple that I hate to even call it a recipe. And though I personally do not subscribe to the low carb lifestyle, this recipe fits the bill and would be amazing over cauliflower rice! Me? I recently discovered Costco's quinoa and kale mix that you pop in the microwave for all of 3 1/2 minutes.... Poof! Easy and fast meal.
Ingredients:
- 1 lb chicken tenderloins, cut into bite-size pieces
- 1 medium onion, chopped
- 1 can diced tomatoes
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1 cup packed baby spinach leaves
Directions:
- In a nonstick skillet, brown chicken on all sides.
- Add onion and cook ~5 minutes or until onion is soft.
- Add spices and tomatoes; bring to a boil. Cover, lower heat, and simmer 5 minutes longer.
- Uncover, add spinach, and cook just until spinach is wilted.
