Midweek Mealtime - Herbed Chicken with Spinach & Tomatoes

Today's recipe is one of those meals that is so simple that I hate to even call it a recipe.  And though I personally do not subscribe to the low carb lifestyle, this recipe fits the bill and would be amazing over cauliflower rice!  Me?  I recently discovered Costco's quinoa and kale mix that you pop in the microwave for all of 3 1/2 minutes....  Poof!  Easy and fast meal.

midweek mealtime low carb chicken with spinach and tomatoes


  • 1 lb chicken tenderloins, cut into bite-size pieces
  • 1 medium onion, chopped
  • 1 can diced tomatoes
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1 cup packed baby spinach leaves


  1. In a nonstick skillet, brown chicken on all sides.
  2. Add onion and cook ~5 minutes or until onion is soft.
  3. Add spices and tomatoes; bring to a boil.  Cover, lower heat, and simmer 5 minutes longer.
  4. Uncover, add spinach, and cook just until spinach is wilted.
