First of all, I have to apologize for the lack of creativity expressed in this name. But seriously, there's no other way to describe this dish. It is literally just a few layers, in a square pan, baked for a total of 40 minutes.
But it's so worth making. It's company-worthy; it's colorful; and it's healthy to boot! Oh, and did I mention? It's really really easy and is made with nice, basic ingredients - a fact that makes the hubby quite happy.
Ingredients:
- 2.5 pounds chicken tenderloins (or breasts cut into thin strips)
- 1/2-1 cup fresh basil leaves (keep in mind that fresh = mild flavor)
- 1 cup part-skim, shredded, mozzarella cheese, divided in half
- 1 12-oz jar roasted red peppers, drained
- 1 cup halved grape tomatoes
- 1/4 cup zesty Italian dressing
Directions:
- Preheat oven to 400 degrees
- Place 1/2 chicken in the bottom of a 9 inch square pan.
- Layer roasted red peppers, basil leaves, and 1/2 cup mozzarella cheese.
- Top with remaining chicken and Italian dressing. Bake for 30 minutes.
- After 30 minutes, top dish with tomatoes and remaining cheese. Return to oven for 10 more minutes or until cheese is melted and bubbly.
