Midweek Mealtime - Slow Cooker Buffalo Chicken Balls

Wednesday, January 15, 2014

I mentioned last week how much I love my slow cooker when it's cold.  I also love it when I'm busy or when I'm lazy or when I just don't want to worry about what to cook for dinner in the evening.  So, basically, I just love it any time!

This recipe literally took me ten minutes to throw together, and it was an amazing dinner to come home to.

Ingredients:
  • 2 lb ground chicken breast
  • 1 whole egg
  • 1 cup dry quick oats
  • 1/4 cup diced onion (I used green onions)
  • 2 tsp minced garlic
  • 1/4 tsp dried dill weed
  • 1/2 tsp dried chives
  • 1/2 tsp dried parsley
  • 1/4 tsp onion powder
  • 1/2 tsp sea salt
  • 4 oz fat free crumbled feta cheese
  • 1 Tbsp. butter, melted
  • 1 1/2 cups Frank's Red Hot Wing Sauce

Directions:
  1. Using a mixer (or your hands), combine all ingredients except for butter and wing sauce.
  2. Form meat into balls approximately 1 1/2 inches in diameter.  You should get 24 balls.
  3. Place balls in 4 quart slow cooker.
  4. Combine melted butter and wing sauce; pour over chicken balls.
  5. Cook on low 6 hours.
