I don't know why, but last week all I could think about was a nice juicy piece of red meat. I found a recipe for steak pinwheels, but - quite frankly - I didn't like anything in it. However, I DID like the idea... so I decided to make my own! It was an experiment, and - as I posted on my Facebook page - I was terrified that the result would be, let's say, less than stellar. But I am happy to report, it was AMAZING!
Ingredients:
- 1.5 lb flank or round steak
- 1/2 cup nonfat Greek yogurt
- 1/2 Tbsp horseradish (fresh or jarred, NOT creamy)
- 5 oz crumbled blue cheese
- 8 oz jar roasted red peppers, drained
- 2 cups fresh spinach
Directions:
- Place beef between two pieces of plastic wrap, and pound to approximately 1/4 inch thickness. I used round steak this time, so I actually ended up with two pieces after I pounded it. Trust me, it still tastes phenomenal. :)
- Spread the yogurt over the steak.
- Evenly distribute the horseradish over the yogurt. If you like the flavor, don't be afraid to add more. I definitely will be next time I make this (which, I just bought some more steak with that specific purpose, so it will be soon!).
- Sprinkle the blue cheese and red peppers evenly over the steak.
- Spread the spinach over the steak.
- Roll TIGHTLY and secure with toothpicks, if needed.
- Bake at 425 degrees for 35-45 minutes, depending on preference (I did 35 minutes because I prefer my beef a bit on the rare side).
- Let the meat rest for 10 minutes before slicing and serving.
