So yesterday I promised you a tried-and-true winner, and I promise this recipe won't disappoint! Think a slightly different take on traditional chicken cordon bleu. And the best part? It comes together in less than 10 minutes and bakes for 45 - the perfect amount of time to squeeze in a little Fix workout.
I just made two, but this recipe is easily compounded to satisfy any size party.
Ingredients:
- 2 chicken breast halves, pounded thin
- 18 slices turkey pepperoni (9 for each breast)
- 1 jalapeno cheesestick
Directions:
- Place 9 slices of turkey pepperoni on each chicken breast half in such a pattern that it will all be contained when rolled. I did it in the following pattern:
- Place half a cheesestick on each breast.
- Roll and secure with toothpicks.
- Bake at 375 degrees for 40-45 minutes or until chicken is cooked through.
