I just realized something as I was sitting down to write my next Midweek Mealtime post. There's a meal that we have almost every single week that has somehow *not* shown up on this blog. That is, quite frankly, a travesty. This meal is easy, fast, and FULL of flavor.
It has beef, veggies, spices, and a high protein carb. Even the Mister likes it (though, to be transparent, he doesn't use the yogurt or olives).
All that being said, shall we get to it?
Ingredients:
- 2 (10-oz) pkg frozen quinoa and kale blend
- 1½ lb lean ground beef (I use at least 90% lean)
- 1 large (or 2 small) red onion, chopped
- 1½ tsp dried oregano
- 1 tsp dried thyme
- ½ tsp dried basil
- ½ tsp dried marjoram
- ½ tsp granulated garlic
- 1 pint grape tomatoes, halved
- 1 container crumbled feta cheese
- 1 cup Greek yogurt
- ¼ cup pitted kalamata olives if desired
Directions:
- Cook the quinoa blend in the microwave as directed.
- Meanwhile, combine the beef and spices. Brown beef mixture in skillet until well done.
- Divide the quinoa among four bowls. Top with beef.
- Divide tomatoes, feta, yogurt and olives (if using) among the bowls.
